Diet Tip-Eating Healthy

Remember to eat your carbs early in the day!! Bread is a great breakfast, because it will give you energy later in the day!!

My favorite breakfast is sour dough bread with butter, garlic salt and Paresan (however you spell that) cheese!!

Great with leftover spagetti too, or even turn it into a grilled cheese sandwhich with some Velveeta Cheese

Dinner

Thinking something with Hamburger meat since Robyn and Jacob are suppose to come over!! Any suggestions??

Good Morning~~

I am just so excited to be able to watch the morning news today and drink my coffee while everyone is awake, that I thought that I would take the time to blog!!

What I am working on this week!!

I am working on getting all my craft stuff together for the carnival out at soccer, I brought the boxs out in the living room, and the kids were so excited, needless to say the material is everywhere, but I am going to take the blankets that they latched on to, and turn them into new blankets for them!!

I am still at home with the kids, money is tighter then I would like, but we are hanging in there the best that we can. All we can do is have faith that the lord has a plan for us, and hope for the best!!

Randy has had a crazy week, and is working his normal days off this week, which at first I didn't like, but then thought this is not the right attitude, and changed it to... I am excited that they allowed him to work these days, because then instead of loosing 30 hours of pay this week, he only looses 10.

I have also got the kids back into church in the last few months, and I feel so blessed that they have enjoyed it as much as they have. Mickey loves her teacher Miss Kristen, and talks about her non stop!! Sean like the class so much that he will war his big boy underwear to church, just to be in "the big kid class" and Drake loves his so much that he no longer screams and yells when I leave him... I also LOVE my class, I feel that they are an amazing group of ladies, and that GOD has placed me just where he wants me!!

I think I hear someone moving around, so I am leaving for now, but will be back soon!!

I promise, that I have not fallen off the face of the planet, I am alive and well, and really need to get back to blogging about what we have been up to, and all the reecipies that I have been trying!!

Memorial Day Weekend

My week last week was probably the longest week of my life, Thusday and Friday were such nightmares, that I spent the whole rest of the weekend at m parents house, just soaking up time with the people that love me. I litterally lived at my parents house (other than sleeping at home). Here are some of the pictures of the kiddos in the pool, enjoying their time outside.

Monday May 11th, 2009 HAPPY BIRTHDAY MOMMY!!

Today is my mom's birthday!! Happy Birthday Mom!! Hopefully you will enjoy your Lawrys's Seasoned Salt, Mickey was really excited to get it for you, and hopefully you make it to bed EARLY for a change!!

What's for Dinner tonight?? Potato Casserole??

1 package of frozen hashbrowns (you will have to defrost prior to cooking) main reason we had this tonight and not last night!! HAHA
1/2 cup melted butter
1/2 cup chopped onion (my kids would prefer that I left this part out)
1 can cream of chicken soup
aprox 2 cups of shredded cheese (I think I used more, but they like CHEESE)
1 tsp of salt
1 tsp of pepper
2 cups of sour cream (i used more here too, but I love this stuff)

mix it all together and put it in a casserole dish.

top it with about 2 cups of smashed ritz crackers and about a 1/4 cup of melted butter. Bake at 350 degrees for about 45 min.

I took pictures of this tonight, so hopefully I will remember to add them later!!

Saturday May 9th-2009

Potato Casserole

1 to 2 pkg frozen hash brown potatoes
1/2 cup melted butter
1/2 cup chopped onion
1 can cream of chicken soup
2 cups of grated chedder cheese
1 tsp. of salt
1 tp pepper
1 pt of sour cream (I always use more than that)
1 1/2 cup of ritz crackers
1/4 butter

defrost potatoes and mix together ingrediants. top with 1 1/2 cup ritz crackers and 1/4 cup melted butter. Bake at 350 degrees for 45 minutes.

Where have I been!!

I am so not a organized person, but I will update this post with some pictures from the last couple of days and where I have been and what I have been doing, like Today-Satuurday May 9th, 2009. We went to Nana and Papa's house and went swimming!! I so love my parents for helping me through everything and with everything.

Tuesday-May 5th-Cheesy Beef and Macaroni

At least that is what Mickey calls it, or well what we had before but I can't find the exact recipie that we used, so we are winging it, and we can make adjustments if we need to.

We are starting with

1 pound hamburger meat
1 can tomato paste
1 can tomato sauce
1 to 2 cups of water
1 box of Macaroni and cheese

brown the meat and season it to taste, drain the fat. (you don't have to drain it, but if I don't, it totally grosses me out. Add tomato sauce, tomato paste, macaroni, cheese packet and water. Simmer until the noodles are tender, you can add more water as needed. Most likely I will serve this to the kids with corn, because they seem to think corn goes with everything.

Friday May 1st-Drake-A-Bob's 1st Birthday

I just want to say a HUGE THANK YOU to my friend Robyn for coming over and helping me get through one of the hardest days in my life to date!! She came over and helped me make a cake to celebrate Drake's Birthday!!

What a difference a year makes... this is Drake 1 year ago!!


And this is Drake NOW!!!




Its amazing how fast he went from being the tiny baby that would fall asleep in my arms to the independent little man that he is today. I always tried to tell him to slow down and stay the baby, but he is determined to growp up, he started walking a few months ago, and just gets bigger all the time!!

I don't know what this is caled, but it smelled so good when it was cooking!!

1 pound ground meat
1 cup of un cooked rice
1 can of diced tomatoes
1 table spoon of minced onion
1 teaspoon of Italian Seasoning
2 tablespoons of minced garlic

brown the meat, toss it in the crock pot, add 1 cup of rice. Drain the can of tomatoes into a measuring cup, then dump the tomatoes in and add water to the liquid that you drained from the tomatoes to measure up to 2 cups of water, pour it in add your seasonings, mix together and let it cook 2-4 hours, or even longer, I use the keep it warm setting and it cooked for 6 hours.

The kids ate it, but I had to add ketchup to it, to get them to go crazy for it!! But everyone is different!!

Wednesday April 29th Beef Taco Skillet

I got this one from an add in a magazine that I was reading, I believe at the dentist office on Tuesday.

1 pound ground beef
1 can tomato soup
1/2 cup of salsa
1/2 cup water
6 flour totillas (6 in. taco size I guess, I used about 4 burrito size tortillas)
1/2 cup shredded cheese

cook the meat, drain the fat. Stir in the soup, water and tortillas. Bring to a boil. Reduce heat to low and cook for about 5 min. Stir and top with cheese. Makes about 4 servings. I fed all four kids, myself and still have at least a serving left over.

Tuesday Aril 28th Chicken and Rice

I really wanted to use the crockpot, so I went with my own version of the recipie that I had planned on using. I liked it, but it wasn't exactly what I had been expecting.

4-6 boneless/skinless chicken breasts
1 can cream of cream of chicken soup
1 can cream of mushroom soup
1 smal can of chopped mushrooms
about a can or two of chicken broth
1/2 to a cup of rice, I started with half a cup but added more

put it all in the crockpot and cook on low 6-8 hours. My crockpot seems to cook hotter then most, so I could have probably just done it on keep warm all day and it would have been fine.

I think this made the rice a little too mooshy for my taste, but boy did the kids eat it up. I was really surprised, and they kept asking for more, even little Drake ate more than he normally eats.

Monday April 27th--- Meatloaf

I have never actually cooked meatloaf before, but is something that I wanted to try.



Ingrediants:

1 pound hamburger
2/3 cup saltine crackers (Mashed up)
1 1/2 cup of milk
1 egg
1/4 cupp chopped onion
1 teaspoon salt
Dash of pepper
Dash of accent
dash of worecestershire sauce (Monica, who gave me the recipie likes this stuff so she uses more, I will have to experiment and let you know!!







DON'T COOK THE MEAT!! that is how I ended up with spaghetti on Saturday night!! but take all your ingrediants and mix them together!! Use your hands and mix it and then shape it in a loaf and cook it!!



cook for about 45 minutes at 350 degrees!

My goal is to make a list at the beginning of the week, and stick to it!! Supposidly it will save time and money!! Not so far though, because last night I had to go to the store to get supplies for the week!! Who knew such little seasoning bottles costed so much!!

What's for Dinner Tonight

Well I have recently decided to try to make a menu up in advance, and stick to it for the week. I have been told that this will save money and time. Well with 4 kids to feed, I will try it!! I haven't planned out the rest of the week yet, but we'll start with what's for dinner tonight!! Now originally I was going to make a meatloaf recipie that I got from my friend Monica, but since I browned the meat before checking the directions, we went with spagehti instead.

Saturday- Spaghetti (I swear I will never spell this word right)

1 lb hamburger
1/2 onion chopped
1 can stewed tomatoes
1 can chopped mushrooms
1 jar sauce (I think I used Ragu tonight)
Seaonings to taste
Garlic Salt while the meat was cooking
Ketchup after the meat was drained

Directions:
brown hamburger meat, add chopped onions and garlic salt (I like it for taste)
drain the meat. Put it back on the stove and add the rest of the ingrediants and let them simmer! I tend to sweeten it with Ketcup, and I can still remeber my dad saying that my mom in the kitchen with ketchup was like a kid playing with mud pies... I don't know if that makes much sense to anyone, but I think Ketchup goes with just about everything, if you don't believe me, you should ask my hubby!! HAHAHA
I forgot to mention that you should also have water boiling, so that you can cook your noodles, but I guess if your someone that cooks, you already knew that!! I will add the pictures later and let you know the reviews from the 3 oldest kids and my hubby!!



I think Drake was the happiest to get Spagehtti, he literally was licking his bowl clean!!
