Wednesday April 29th Beef Taco Skillet

I got this one from an add in a magazine that I was reading, I believe at the dentist office on Tuesday.

1 pound ground beef
1 can tomato soup
1/2 cup of salsa
1/2 cup water
6 flour totillas (6 in. taco size I guess, I used about 4 burrito size tortillas)
1/2 cup shredded cheese

cook the meat, drain the fat. Stir in the soup, water and tortillas. Bring to a boil. Reduce heat to low and cook for about 5 min. Stir and top with cheese. Makes about 4 servings. I fed all four kids, myself and still have at least a serving left over.

Tuesday Aril 28th Chicken and Rice

I really wanted to use the crockpot, so I went with my own version of the recipie that I had planned on using. I liked it, but it wasn't exactly what I had been expecting.

4-6 boneless/skinless chicken breasts
1 can cream of cream of chicken soup
1 can cream of mushroom soup
1 smal can of chopped mushrooms
about a can or two of chicken broth
1/2 to a cup of rice, I started with half a cup but added more

put it all in the crockpot and cook on low 6-8 hours. My crockpot seems to cook hotter then most, so I could have probably just done it on keep warm all day and it would have been fine.

I think this made the rice a little too mooshy for my taste, but boy did the kids eat it up. I was really surprised, and they kept asking for more, even little Drake ate more than he normally eats.

Monday April 27th--- Meatloaf

I have never actually cooked meatloaf before, but is something that I wanted to try.



Ingrediants:

1 pound hamburger
2/3 cup saltine crackers (Mashed up)
1 1/2 cup of milk
1 egg
1/4 cupp chopped onion
1 teaspoon salt
Dash of pepper
Dash of accent
dash of worecestershire sauce (Monica, who gave me the recipie likes this stuff so she uses more, I will have to experiment and let you know!!







DON'T COOK THE MEAT!! that is how I ended up with spaghetti on Saturday night!! but take all your ingrediants and mix them together!! Use your hands and mix it and then shape it in a loaf and cook it!!



cook for about 45 minutes at 350 degrees!

Wednesday-Kids Casserole (thats the name, but we'll see what my kids think)

Thursday-Most likely hubby is bbq'ing steak but that may change

Friday-Hopefully Hamburgers to celebrate Drake's first Birthday!!

My goal is to make a list at the beginning of the week, and stick to it!! Supposidly it will save time and money!! Not so far though, because last night I had to go to the store to get supplies for the week!! Who knew such little seasoning bottles costed so much!!

What's for Dinner Tonight

Well I have recently decided to try to make a menu up in advance, and stick to it for the week. I have been told that this will save money and time. Well with 4 kids to feed, I will try it!! I haven't planned out the rest of the week yet, but we'll start with what's for dinner tonight!! Now originally I was going to make a meatloaf recipie that I got from my friend Monica, but since I browned the meat before checking the directions, we went with spagehti instead.

Saturday- Spaghetti (I swear I will never spell this word right)

1 lb hamburger
1/2 onion chopped
1 can stewed tomatoes
1 can chopped mushrooms
1 jar sauce (I think I used Ragu tonight)
Seaonings to taste
Garlic Salt while the meat was cooking
Ketchup after the meat was drained

Directions:
brown hamburger meat, add chopped onions and garlic salt (I like it for taste)
drain the meat. Put it back on the stove and add the rest of the ingrediants and let them simmer! I tend to sweeten it with Ketcup, and I can still remeber my dad saying that my mom in the kitchen with ketchup was like a kid playing with mud pies... I don't know if that makes much sense to anyone, but I think Ketchup goes with just about everything, if you don't believe me, you should ask my hubby!! HAHAHA
I forgot to mention that you should also have water boiling, so that you can cook your noodles, but I guess if your someone that cooks, you already knew that!! I will add the pictures later and let you know the reviews from the 3 oldest kids and my hubby!!



I think Drake was the happiest to get Spagehtti, he literally was licking his bowl clean!!
